Recipe: Gekochte Kartoffel Klösse – Boiled Potato Dumplings

Here’s not one, but two traditional Amana Colonies recipes! What a good way to make use of potatoes that were grown in abundance on the “home acres”.

Gekochte Kartoffel Klösse – Boiled Potato Dumplings

4 cups boiled riced potatoes
½ cup flour
Salt and pepper to taste
2 eggs, slightly beaten
2 slices bread, cut in cubes
1 medium-sized onion, minced
2 tablespoons butter

Blend potatoes, flour and seasoning. Add eggs. Brown bread cubes and onion in butter and add. Mix well and form into dumplings. Cook in boiling, salted water five to seven minutes. Serve with onion sauce. (See below)


 

Zwiebel Sosse Für Kartoffel Klösse – Onion Sauce for Potato Dumplings

½ cup minced onion
3 tablespoons lard
3 tablespoons flour
3 cups water
1 tablespoon cream
Dash of vinegar

Brown onions slightly in hot fat. Add flour and stir slowly. Add water, a little at a time, to make a smooth sauce. Take from fire, add cream and vinegar. Do not overbrown onions as sauce should have a creamy color.
