Recipe: Lebkuchen ohne Eier – Honey Cookies without Eggs

The final recipe of the three honey cookie variations is a good one for cooks seeking to cut fat and cholesterol, as it’s a version without eggs!  (It also skips the whiskey.)

Lebkuchen ohne Eier – Honey Cookies without Eggs

1 cup brown sugar
1 cup honey
1 cup margarine
1 heaping teaspoon baking soda
¼ cup hot strong coffee
4 ½ cups flour
½ teaspoon ginger
¼ teaspoon cinnamon
½ teaspoon salt
1 teaspoon vanilla

Preheat oven to 350°.

Cream together brown sugar, honey, and margarine. Dissolve baking soda in hot coffee. Add to creamed sugar mixture, alternating with flour. Stir in ginger, cinnamon, salt and vanilla.

Chill dough, then shape into rolls (1 ½ to 2 inches in diameter) and wrap in waxed paper. Refrigerate overnight. Slice into ¼-inch slices and bake on greased cookie sheet for about 10 minutes. Cookies should be firm and chewy, but not crisp or dry. Frost, if desired, with your favorite vanilla icing.

Makes about 4 dozen cookies.
