Recipe: Pumpkin Bars

You’ll need a jelly roll pan for this recipe!

Recipe: Pumpkin Bars

1 c. oil

2 c. sugar

2 c. pumpkin

4 eggs

2 c. flour

2 tsp. baking powder

½ tsp. salt

1 tsp. soda

2 tsp. cinnamon

nuts, optional

FROSTING:

3 oz. pkg cream cheese

1 tsp. vanilla

¾ stick oleo

1 T. milk1

¾ c. powdered sugar

Mix first 9 ingredients well and pour into a jelly roll pan (9 x 17-inch). Bake at 350° for 20 to 25 minutes. Cool and frost with cream cheese frosting.

Frosting: Mix ingredients well and frost bars.
