Recipe: Apple Fritters II

Here’s a recipe to help you make use of apples, a fruit that can be found in abundance around the Amana Colonies!

Apple Fritters II

6 eggs, separated
1 cup whole milk
1 ½ cups sifted flour
½ teaspoon baking powder
½ teaspoon salt
4 large apples, peeled, cored, and cut into very small chunks or rings
Lard or vegetable shortening for deep fat frying
Powdered sugar

Beat egg yolks and whole milk. Sift together flour, baking powder, and salt. Add flour mixture to beaten yolks and stir. Beat egg whites until stiff. Fold whites into batter. Stir apple chunks into batter. Deep fat fry large spoonfuls in hot lard or vegetable shortening. Fat should be hot enough to brown a bread cube in 60 seconds — no hotter. Sprinkle with powdered sugar and serve warm.

Serves four.
Note: If the apples you are using are not quite fresh, chopping rather than cutting them into rings works best. For a simple variation sprinkle cinnamon on top as well as sugar.
