Get in your vegetables while having a sweet treat at the same time with this cake recipe:
Chocolate Zucchini Cake
3 eggs
6 T. cocoa
2 T. butter, melted
2 c. grated zucchini
¼ tsp. baking powder
1 tsp. vanilla
1 tsp. baking soda
1 tsp. cinnamon
1 c. salad oil
1 tsp. salt
Beat eggs; add sugar and oil. Melt chocolate. Add to sugar mixture. Add vanilla and zucchini to dry ingredients. Grease and flour pan; pour batter in, and bake at 350° for 1 hour.
