Here’s a holiday recipe that uses gumdrops. Choose which ones you use to customize the color and taste to your preference!
Holiday Gumdrop Cake
4 c. flour
2 c. sugar
1 tsp. cinnamon
2 ½ tsp. cloves
1 tsp. salt
2 eggs
1 ½ c. applesauce
1 c. butter or margarine
1 tsp. baking soda
½ c. hot water
2 lb. sm. gumdrops, or cut up lg. ones (no black ones)
1 lb. raisins
1 lb. nutmeats
Sift first 5 ingredients together. Mix eggs, applesauce and oleo (will be “curdly”). Dissolve soda in hot water; add to egg mixture alternately with dry ingredients. Add gumdrops, raisins and nutmeats.
Bake in a well-greased floured loaf pan in a slow oven (325°) until done in center. Insert toothpick. One recipe makes a large (angel food cake) pan or two 1-pound coffee can size or 2 dozen cupcakes. After it is baked and cooled, drizzle on frosting and decorate with nut halves, gumdrops or red and green cherries (candied).
