Recipe: Sweet Chex Mix

I got this recipe from a friend living in West Branch, Iowa – Lisa Kofoed. She served this at a party and people really gobbled it down! The sweet taste is a nice change from the traditional chex mix. I also like that you can make it in the microwave and you use brown grocery sacks to fix it in. NO CLEAN UP!

Sweet Chex Mix

½ c. margarine
1 c. brown sugar
¼ c. Karo syrup
½ tsp. salt
¼ tsp. baking soda
2 c. Rice Chex
2 c. Wheat Chex
2 c. Corn Chex
2 c. pretzels
1 c. peanuts

Place the first 4 ingredients into a bowl. Put in the microwave on HIGH for 4 minutes. Mix cereals, pretzels and peanuts in a large bowl. Remove bowl from the microwave and stir in baking soda. Mix until slightly caramel-colored. Pour over cereals and stir. Place mixture into a large grocery bag and put into the microwave on HIGH for 1 ½ minutes. Remove and shake well. Place into the microwave again for 1 ½ minutes. Again, remove and shake well. Place on a cookie sheet to dry. Break into pieces and store in an airtight container. Do not freeze or refrigerate.
